Shigoku means "ultimate" in Japanese — and these oysters live up to their namesake. Raised in the pristine waters of Puget Sound, they are tumbled by the tides for two years. That process creates deep cups filled with plump, delicious meat and a flavor that finishes with a beautiful balance of sweetness and minerality.
